Water in the river. Hand picked fruit from the Croucher vineyard up in the skies of the Whitlands Plateau, in the Southern King Valley. Destemmed and soaked on skins overnight. Wild fermented and aged in both stainless and old french oak for 8 months, approx 80/20. Racked once by gravity and bottled 8 months ago with 30ppm SO2. This refreshingly dry vino is unfiltered and unfined.

“We got riesling from Whitlands that gets a 24 hour skin maceration then a press off to stainless and barrel and a good deal of time on lees. Then a good deal of time before release. Ipso, here we go.
Ok, so this is good. Shades of Clemens Busch? Let’s not do that to younger gen winemakers, but sheesh, the scintillating core of minerally acidity, the sheath of slippery texture with a little chalky grip, the weightier citrus elements, the hazy green apple juice, the licks of salted and roasted cashew and hazelnut going on. It all adds up. Immense poise and yet textural experience, decidedly lengthy in its finish, refreshing and yet rich in its way. And the mellow nature of the wine with ageing time is spot on. An absolute belter.
