This one is a lot of fun. We hand-picked cherries in Mornington and fermented them under carbonic maceration for a couple of weeks. They were then gently pressed, and the fermenting juice was poured over whole-bunch Pinot Noir from Macedon for a rolling co-ferment. After pressing, the wine was transferred to old French oak for élevage. The final blend is about 30% cherries and 70% Pinot Noir. It shows vibrant cherry notes (of course!), along with earthy spice and hints of ruby grapefruit.

“From Mornington and Macedon, and from cherries and pinot noir. The blend results in about 30% cherry juice poured over 70% pinot noir and all of it fermented together. What fun.
Utterly delightful! Hard to pin down for a typical assessment, this drinks like a very fine, slightly sour-bitter juice with so much vibrancy and a near health-tonic like feel. A bit more depth from the pinot noir, one suspects, a little woozy-boozy in that feel, but geez, this is so wonderful to drink and such a pleasure at that. Very much for drinking cold and feeling extra good.”
