Early in the season, hand-picked whole-bunch Pinot Noir from Mornington was wild-fermented. Later, cool-climate destemmed Syrah from Macedon was layered on top for a rolling co-ferment. Matured in old French oak for élevage, the result is a moreish, light-on-its-feet blend with notes of strawberry milk, chocolate, and violet.
